Special K's Chinese Lo Mein Noodles

Ingredients
16 oz lo mein noodles, soba noodles, or thin spaghetti 1 clove garlic, crushed or chopped1/2 cup onion, chopped1 lb. boneless skinless chicken breast, cubed2 carrots, peeled and sliced3 celery stalks, sliced1 red pepper, cubed or sliced into 1-2" 1 cup cabbage, shredded1/4 cup green onion1 cup chicken broth3 tbs soy sauce1 tbs granulated sugar or sugar substitute3 tbs olive oil1 tbs crushed red pepper (optional)
Directions
Boil 2 qt water. Add noodles and cook per package instructions

Chop all ingredients. Keep hard vegetables in one bowl, chicken in another, soft vegetables (cabbage and green onion) in a third.

In a large skillet or wok, heat olive oil. Add garlic and onion and stir fry 1 minute.

Add chicken. Stir fry until cooked through and onion is clear.

Add carrot, celery, and red peppers. Stir fry 3 minutes

Add cabbage and green onion. Stir fry 1 minute.

Drain noodles and add noodles to stir fry

Add chicken broth, soy sauce, and sugar.

Add crushed red pepper if desired. Stir fry for 1-2 minutes.
