Mango and Prawn Salad

2 tbsp lime juice 1 small red chilli, seeded and finely chopped 2 tbsp fish sauce 3 shallots, finely sliced 2 green mangoes1 tbsp sunflower oil 175g pack raw headless prawns, peeled 2 little gem lettuces 1 Spring Onion, sliced40g dry roasted peanuts, optional
1) Mix together the lime juice, shallots, chilli and fish sauce in a large bowl. Cover and set aside for up to 4 hours.
2) Peel and roughly dice the mango, and stir into the shallot and fish sauce mixture. Heat the oil in a frying pan or wok, add the prawns and stir fry quickly until heated through - about 2 minutes.
3) Scatter the lettuce leaves on a serving plate and spoon the salad mixture in the centre. Surround with the prawns and scatter over the spring onions
