Splenda Whole Wheat Banana Bread

Ingredients
11/3 cups whole wheat flour1/2 cup Splenda no-cal granulated1 tsp baking powder1/2 tsp baking soda1/2 tsp salt1/2 tsp cinnamon11/4 cups mashed bananas1 tbsp oil1/3 cup skim milk1/2 tbsp vinegar2 tsp vanilla1/4 cup chopped walnuts
Directions
Preheat oven to 350
Prepare 9x5 inch loaf pan.
Add vinegar to milk or substitute with low fat buttermilk.
Blend dry ingredients.
Blend wet ingredients.
Pour wet mix into dry, do not overmix.
Add nuts and stir.
Pour into pan and bake until set, aprox. 45 min.
Loaf slices into 8 generous servings.

    This was a super recipe - I couldn't believe it had no butter and no eggs and no white flour. The bananas give it great moisture. The loaf does not raise as high, but is dense and flavorful. I reduced the splenda a little and did not use nuts. It was gone very quickly. - 2/3/12

    The recipe was okay but a little sweet. I would probably cut the Splenda in 1/2. More than 3 bananas would also improve the flavor. It was moist and the texture was close to regular white flour banana bread. I will make it again but with the suggested changes. - 3/7/10
