Spicy Pork Stir Fry

2 boneless pork loin chops1/2 red pepper, cut in strips1/2 green pepper, cut in strips1 small carrot, cut in strips,3 scallions, chopped1 tbsp Fajita mix2 tbsp water2 x 62.5g bags white rice, long grain
Prep veg as stated.
Cut fat from chops and cut into 1/2 inch strips,
Cook meat through in a non stick pan, preheated at a medium temp.
Add the scallions and stir for 2 mins before adding the carrots and stirring them for 3.
Add peppers and stir for 3 mins.
Coat ingredients with 1tbsp of fajita mix and once fully covered, add 2 tbsp of water.
Leave to simmer for 5-10 mins. Serve with rice
