Madi's Shrimp Etouffee

Ingredients
2 Tbsp Olive Oil2 Cups Diced Green Bell Peppers1 Cup Diced Onion1 lbs Shrimp 1 1/2 Cups Salsa (Pace Chunky Medium)1 Can 98% Fat-Free Cream of Mushroom Soup
Directions
Heat olive oil in stock pot. Saute peppers and onion until soft. Add shrimp, salsa and soup. Cover and simmer 20 minutes over med-low heat. Serve over rice. Makes 8 servings.
