Samosa Quesadillas

1 cup shredded cabbage1/2 large onion, chopped1 carrot, chopped2 garlic cloves, minced1 cup cooked mashed potato (I use instant)1/2 cup thawed frozen peas1 Tbsp curry powder1 tsp minced fresh ginger root1 Tbsp lite soy sauce1 cup shredded cheese (I use cheddar)8 (6-in) flour tortillasreduced fat sour cream salsa
Preheat oven to 350 degrees.
Saute cabbage, onion, carrot, curry powder, ginger & garlic over medium-high heat until cabbage is crisp tender.
Remove from heat; stir in potato, peas & soy sauce.
Place 4 tortillas on a large baking sheet; spread 1/2 cup filling over each tortilla. Top each with 1/4 cup cheese and another tortilla.
Bake for 15 minutes or until thoroughly heated and slightly browned.
Cut into wedges and serve.
