Pork and Pasta Stir Fry

Ingredients
1 lb. pork tenderloin cut into 1" pieces1/4 cup lite soy sauce3 cloves of garlic, chopped1 tsp fresh ginger, grated1/4 tsp dried red pepper2 cups fresh snow peas1 medium red bell pepper1 cup sliced fresh mushrooms3 cups cooked whole wheat spaghetti (6 oz)1/3 cup fat free chicken broth2 tsp sesame oil
Directions
Combine soy sauce, garlic, ginger and red pepper in a ziploc bag. Add cut up pork. Marinate in refrigerator for 20 minutes, turning several times.

While meat marinates, cut up pepper and mushrooms, cut snow peas in half.

Cook spaghetti according to package directions then drain.

Stir fry pork along with the marinade. Add vegetables when pork is cooked through. Continue cooking for about 2 -3 minutes more. Add the cooked spaghetti and chicken broth, mixing well. Add sesame oil just before serving.

Makes 6 servings, about 1 1/2 cups each. If desired, sprinkle a few peanuts or cashews over top (not included in calorie calculation).
