2 cups whole wheat pastry flour2 tsp baking soda2 tsp cinnamon1/2 tsp salt3/4 cup coconut1/2 cup pecans1/2 cup raisins (or dates)1 1/2 cup shredded carrots1 1/2 cup shredded applesMix all together, and add 3 beaten eggs, 1 cup oil, 1/2 tsp vanilla1 cup honeyBake about 20 minutes at 350. Makes 2 dozen
