Brown Rice with Black Beans

3 TBSP - EVOO1 cup chopped - Spanish or Red Onion3 chopped Garlic Cloves1 chopped Red bell Pepper1 large carrot chopped1 chopped Jalapeno pepper (seedes removed)1 can (15.5 oz) Black beans - drained and rinsed1 1/2 cups Brown Rice1 cup Chicken Broth or Vegetable Broth1 1/2 cups waterSalt & Pepper to taste
Saute onions, garlic, red pepper, carrots, jalapeno in pot with EVOO, about 5 mins. Add Brown Rice and cook together for another 5 minutes. Add Black beans, chicken/veggie broth and water and simmer until rice is soft and fluffy. Add Salt & paper to taste
