Low-cal, low carb, Spicy Beef Stir Fry

1/2 Beef Broth1/4 Cup reduced sodium soy sauce1/4 cup Newmans own Light sesame dressing (or any 35 calorie per 2 tblspoon dressing)1 clove of garlic, minced1/2 teaspoon of canola oil1 pound of top sirlon, trimmed of fat and thinly sliced1 tblspoon minced or ground fresh ginger1 medium onion thinly sliced8 ounces of sliced mushrooms6 ounces of fresh spinach1 tablespoon crushed red pepper (or to taste, I use two!)4 green onion cut on the diagonal in one inch lengths2 packages of shirataki tofu noodles - well rinsed, drained and cut with kitchen shears (or other noodles, but the nutritionals are based on these 20 calorie a serving noodles).
1) in small bowl mix together beef broth, soy sauce, dressing and minced garlic. Set aside (if you desire a thick sauce you can add a tsp of corn starch)
2) Heat oil in large non-stick skillet, add ginger and beef. Stir beef constantly until no longer pink (approximately 3 minutes). Remove beef from skillet with slotted spoon. Set aside.
3) add mushrooms and onions to skillet, stirring, cook until onions are tender and mushrooms start to brown (about 3 minutes). Add green onions and spinach, cook until just wilted (about a minute). Add the broth mixture and red pepper. Return the sirloin to the pan, add noodles and bring to a boil. Reduce heat and simmer until heated through.
Makes 4 generous servings.
Note, if you have never used the shirataki noodles you might want to read up on them. My husband and I love them as an alternative to pasta, but they are not for everyone. First off, be prepared that out of the package they have a fishy smell. We put them immediately in the colander (holding our nose, wink, wink) and rinse thoroughly. After that we have no issue with them and use them in all kinds of stuff.
