Apple and Oat Bran Muffins

1 1/4 c. whole wheat flour1 c. oak bran1/3 c. packed brown sugar2 1/2 tsp. baking powder1/4 tsp. baking soda1/4 tsp. salt1/4 tsp. ground nutmeg1/4 tsp. buttermilk2 egg whites2 tbsp. cooking oil3/4 c. shredded, peeled appleNon-stick spray coating
In a medium bowl stir together flour, oat bran, brown sugar, baking powder, baking soda, salt, nutmeg and cinnamon; set aside.
In a small bowl combine buttermilk, egg whites and oil. Add to dry ingredients; stir just until moistened. Stir in shredded apple. Batter may be stored, tightly covered, in the refrigerator for up to 5 days.
To bake, spray muffin cups with non-stick spray coating. Spoon out about 1/4 cup batter into each cup. Bake at 375 degrees for 18-20 minutes or until toothpick inserted in center comes out clean. Makes 12 muffins.

Something is wrong with this recipe...I assumed the 1/4 t buttermilk is actually for the cinnamon referred to in the recipe's instructions, but then how much buttermilk? I used 3/4 c NF milk and 1/2 c applesauce to make the batter moist enough to scoop. If recipe is fixed, I'll remake/rerate. - 7/25/10
