Cholesterol Free Grape-Nut Muffins

1 cup Grape-nut cereal1 cup soy milk1 cup flour1/4 cup whole wheat flour1 Tbsp Baking Powder1 Tsp Cinnamon1/2 Tsp salt1 small banana (mashed)1/2 cup unsweetened applesauce1/2 cup firmly packed brown sugar1/2 cup raisins1 Tbsp Lighter Bake
Makes 12 Muffins
Preheat oven to 400 degrees F
Combine milk and cereal and let stand
Combine flours, baking powder, cinnamon and salt into a large bowl; set aside.
Beat together banana, brown sugar, Lighter Bake and applesauce until creamy; add cereal/milk mixture and blend.
Add wet ingredients to dry ingredients and fold in raisins to just to combine.
Using an ice cream scoop, divide into 12 cupcake sized muffins.
Bake for approximently 20 minutes or until toothpick test comes clean. Cool in pan then remove to wire rack.
