Chicken Enchilladas

Ingredients
Directions
2 cans black beans and liquid1 can chic peas (drain liquid)3/4 can whole kernel corn (drain liquid)1 can crushed tomatoes and liquid12 ounces of chicken breast (no skin)2 ounces cheddar cheese6 multi-grain low fat, low calorie wraps1/2 cup water1 Tbls. chopped onion spice1/2 tsp garlic salt2 tsp. chili poweder
-Preheat oven to 425 degrees
-Cut chicken into thin strips
-Sautte chicken in water and chili powder
-Add all other ingredients accept cheese and wraps
-Bring to a boil
-Grease 13x9 pan
-Fill wraps with mixture from pan and lay seam down in the pan
-Pour remaining pan ingredients on top of enchilladas
-Sprinkle with cheese
-Bake for 20 minutes or until chesses is melted

Was Great! I used fat free flour tortillas it was delicious! Next time I may try ground Turkey for a change. I also would leave off cheese change back time to 15 minutes then add cheese after I take it out of the oven if you let it stand for 10 min it melts nicely without burning. - 7/12/09
