Apple Scarlet Tart

2 cups medium apples2 tablespoons light butter3 tablespoons sugar free maple syrup2 tablespoons honey1 teaspoon sugar4 slices of white bread, crust removed, buttered on one side
Pre-heat oven 350
Peel and quarter apples and place in small 8 " skillet. Add butter, syrup, and honey. Cover and cook until apples are soft, 8-10 min. Uncover and cook until liquid reduces and apples are carmelized, 5 min.
Place 4 slices of bread, butter side up, on top of apples and place in oven. Bake approx. 12-15 minutes or until top is brown.
Cool slightly. Place plate on top and turn over with apples being on top.
Heat 2 tablespoons of apricot jam and spread on top of apples (optional)
