Nonstick cooking spray3/4 c. whole-wheat flour1/2 c. all-purpose flour1/2 tsp. baking soda1/4 tsp. baking powder1/2 tsp. salt1/2 tsp. cinnamon1/2 c. firmly packed brown or light sugar1/4 c. canola oil2 large eggs1 1/2 c. banana mashed1/2 c. plain lowfat yogurt1 tsp. pure vanilla extract1/2 c. sweetened shredded coconut1/2 c. pecans chopped
1. Preheat oven 350 F. Coat either one 9 x 5 inch loaf pan or 2 mini loaf pans with cooking spray.
2. In a bowl mix flours, b. soda, b. powder, salt & cinnamon. Set aside.
3. In a large bowl mix sugar & oil. Add eggs, banana, yogurt & vanilla.
4. Add flour mixture and sugar mixture together, add coconut & pecans.
5. Pour batter into loaf pan (s). Bake 55-60 mins. for large loaf, or 25-30 mins. for small loafs. Cool and serve.
