Healthy Vegetarian Tomato, Basil & Cheese

1 medium ripe tomatoFresh Basil 2-4 slices Veggie Canadian Bacon or Fakin Bacon1 cup 2% Cottage Cheese
Combine a small amount of julianned basil and your cottage cheese in a small bowl. Slice up your tomato and lay out on a plate.
Pop the veggie bacon in the microwave for 2 minutes or until crisp.
Lay the bacon slices over the tomatoes, top with scoops of cottage cheese, drape the basil on the very top and sprinkle with pepper.
You can also use bacon bits for a quicker version. Another good addition is a dash of powdered garlic in the cottage cheese.
This is enough for an appetizer for two people, or a lunch for one.
