Easy Skillet Creole Chicken

8 skinless chicken thighs1/2 tsp pepper1 medium onion, strips1 cup green pepper, strips6 cloves garlic, sliced2 14.5 oz cans of diced tomatoes2 cups water1 tbs tony chachere's creole seasoning1 bay leaf
Lightly brown the chicken thighs sprinkled with pepper in a large skillet with lid.
Remove chicken and saute onions, peppers, and garlic.
Stir in tomatoes, water, creole seasoning, and bay leaf.
Return chicken to pan.
Cover.
Simmer on low 30 minutes or until chicken is done
