2 Chicken Breasts - cooked 3 Hard Boiled Eggs1/2 Cup Finely Chopped Celery3/4 Cup Mayonnaise1 Tsp Salt1/2 Tsp Pepper
In one pot boil 2 boneless skinless breasts. In another pot boil 3 eggs. When the chicken and eggs are done, chop them up. Place them in a medium mixing bowl and add 1/2 cup of finely chopped celery. Add in the mayonnaise, salt and pepper. You can eat right away if you want it warm or refrigerate for later.
You can vary this recipe by adding chopped onion, pickle relish, or anything else you can think of. If using as a spread on crackers, I chop up the chicken and egg real fine to make an easier spread.
