Dave McEldowney's Diabetic Cheesecake

Ingredients
3 8oz pkg of neufchatel cheese3 large eggs3/4 cup Splenda Sugar Substitute1 tsp vanilla extract1/2 pint light sour cream2 T Splenda1/4 tsp vanilla1 prepared graham cracker crust
Directions
Beat together softened cream cheese and eggs (adding one a t a time, beat well after each addition). Add in 5/8 cup splenda and vanilla extract. Mix well.

Pour into the crust and bake at 375F for 30 minutes.

In the mean time, mix the sour cream with 2 T splenda and 1/4 tsp vanilla. At the end of the 30 minutes, spread the mixture over the cheese cake and return to the oven for 3 minutes. Cool completely and chill over night.

Serve with the topping of your choice.
