Spinach Rice Casserole

Ingredients
* *Brown Rice, medium grain, 2 cup (remove) * Olive Oil, 1 tbsp (remove) * Onions, raw, 1 large (remove) * Spinach, frozen, 1 package (10 oz) yields (remove) * Salt, 1 tsp (remove) * Garlic, 5 cloves (remove) * Nutmeg, ground, .25 tsp (remove) * Pepper, red or cayenne, .25 tsp (remove) * Pepper, black, 2 dash (remove) * Egg, fresh, 2 large (remove) * Cheddar Cheese, 1.5 cup, shredded (remove) * Paprika, 1 tsp (remove)
Directions
cook rice. sautee onion, add spinach, salt &garlic. add to rice with seasonings. Mix well. mix in eggs & cheese. Spread in 9x13 pan and dust with paprika. bake 350 for 35 - 40 min, uncovered.

May add .5 c. sunflower seeds. (not included in nutritional info).
