4 eggs 1 cup oil 1 tsp vanilla 3 cups zucchini (shredded) 3 cups flour 2 cups sugar 1 tsp salt 1 tsp baking soda 2 tsp cinnamon 2 tsp baking powder
1. Mix all ingredients together, liquids first, then add dry ingredients.
2. Bake in two, greased and floured, loaf pans for 1 hour at 350 degrees.
3. Makes approximately 40-50 servings

I love this easy recipe. I actually did half sugar half brown sugar and substituted all the oil for sugar free apple sauce. I made them in a individual brownie pan for some mini loaves. I cooked them for 18 - 20 minutes and they came amazingly. Next up is to adapt it to chocolate zucchini bread! - 5/5/11
