Pulled beef slowcooker marriage

Ingredients
1 beef roast (2 - 3 pounds)1/2 bag baby carrots, halved2 stalks celery, sliced1/2 yellow onion, sliced7-8 white mushrooms, thinly sliced6 cloves garlic, rough chop1 can whole potatoes, cubed1 cup fresh spinach leaves1 cup old fashion oatmeal
Directions
Place your beef roast in the crock pot and cover in water, allowing about 1 1/2 inches of water deeper than your roast. Cover and turn on high for 4+ hours. After your roast is nice and tender, pull it out of the crock pot and allow to cool while you add your prepped baby carrots, onion, celery, garlic, and mushrooms. Pull the beef apart with your fingers to allow it to hold together nicely. and cook for 1 more hour. Add precooked potatoes, fresh spinach, oatmeal, and season to taste. Simmer for another 20 minutes & dish up! I'm pretty new to crock pot cooking and read about oatmeal and how it can be used as a thickening agent. As much as I enjoyed, my husband went plain crazy for it!
