Modified Rocco's Rotisserie salad

Oil and vinegar salad dressing: 0.25 cup 2 large heads radicchio, shredded, about 7 cups Salt and freshly ground pepper 3 oranges, 3 fruit (2-5/8 “ dia) peeled and cut into segments, juice reserved One 1-pound warm rotisserie chicken, meat removed and shredded (see technique below) about 15 ounces 6 ounces fresh goat cheese, broken into small chunks 1/4 cup chopped fresh tarragon Toasted Bread reduced-calorie, wheat, 2 slice
Segment an orange by slicing the top and bottom off, then cutting the peel off down the sides. Then just cut toward the center of the orange on either side of each segment to release. Use commercially made rotessirie chicken (Costco is recommended) Toss all ingredients together and enjoy. Makes 4 servings worth (269 calories per serving)
