Crockpot Lentil Soup

Ingredients
2 Cups Brown Lentils14.05 oz Lean Ham (cut up)4 Large Carrots, chopped1.5 Large Onions, chopped4 Stalks Celery, chopped2 Cups Homemade Beef Stock4-6 Cups Water (depending on Size of crockpot)Garlic, Black pepper and Salt Substitute to taste4 Plum Tomatoes, chopped
Directions
Toss everything except for water into the crockpot. Fill with as much water as you need to in order to fill up the crockpot. Cover and cook on high for at least 6 hours, or until lentils are tender.

Makes ~8 one cup servings.
