Marinated Shrimp Kabobs

1 lb jumbo shrimp, peeled and deveined4 bell peppers, mixed colors, cubed1/2 lb cherry tomatoes1 medium onion (or similar), cubed1 can pineapple chunksOther vegetable or fruit chunks as desired--mushrooms are quite good, tooFor Marinade:1/4 cup reduced sodium soy sauce1 tbsp rice wine vinegar1/4 cup peanut or vegetable oilSalt and pepper to taste1 tsp minced ginger (optional)
If using wooden skewers, soak for at least 30 minutes prior to using. Peel and devein shrimp, wash and cube vegetables. Prepare marinade in tupperware or glass container. Reserve 1/4 cup of the marinade to baste the kabobs while grilling.
Add shrimp to marinade, allow to marinate for 15-30 minutes.
Thread alternating pieces of shrimp, cherry tomato, bell pepper, onion and pineapple on each skewer.
Broil the kabobs over medium hot charcoal for 10-15 minutes, turning frequently and basting with reserved marinade.
