Corn & Black Bean Relish

Ingredients
1 can (15oz) or approx 1 1/2 cups black beans, rinsed and drained1 cup frozen corn kernels, rinsed and thawed (or fresh corn, if you can get it!!!)1 jalapeno pepper, chopped1 small red onion, chopped1 clove garlic, minced or pressed1 small red bell pepper, seeded and chopped4 tbsp chopped fresh cilantro1 plum tomato, choppedJuice of 1 lime1 tsp Olive Oil1 tbsp Balsamic VinegarBlack pepper to taste.
Directions
Mix everything in a bowl. Tastes better if made about 1-2 hours before you eat it. Keeps for a few days in the refrigerator.

    I just made this for a garden party I hosted this weekend. It was a delicious side dish! I made it using freshly grilled corn & a grilled poblano pepper which gave the dish a nice hint of heat. I will definitely make this again! - 8/3/08
