Ingredients
1 large shallot, minced (or 2 small ones)3 cloves garlic8 ounces fresh mushrooms1 cup grape or cherry tomatoes1 Tbs olive oil14 oz soft goat cheese1 14oz can of diced tomatoes1/3 cup pine nuts8 oz rigatoni or penne pasta
Directions
Pre-heat oven to 400 deg. While the oven is pre-heating, mince the shallots and garlic, also start your pasta water to boil. Place cherry tomatoes in a shallow glass dish or pan and add the olive oil. Toss to coat well, and bake until blistered, about 15 minutes. After the tomatoes are in the oven, coat a saute pan well with cooking spray and saute shallots, garlic and mushrooms on medium heat about 10 minutes. When the mushrooms are almost tender (about 8 minutes), add the pine nuts to toast them a little. Add can of tomatoes and simmer for 5 minutes. Add goat cheese and blistered tomatoes. Stir constantly until cheese is melted and blended. Add strained pasta and coat well with sauce. Serve with green salad or other green vegetable (not included in calorie count).
