Green Chili Chicken enchiladas

Ingredients
12 oz (4 small) chicken breasts - no skinChopped onion1 Can green chilis 3.5 oz fat free cream cheeseLow fat cream of mushroom soupFat free sour cream 12 oz containerFat free shredded cheddar - .5 cupCherry tomatoes - 1 cup
Directions
Dice chicken breast and saute in water until tender (about 10 minutes) Add Chopped onion and green chilis adding water as needed. Saute until onion is tender. Add Cream cheese. Mix cream of mushroom soup and sour cream together. Add two tablespoons to chicken mixture. Wrap tortillas in damp paper towels and heat in microwave for 30 seconds. Divide chicken mixture evenly between tortillas. Roll tortillas and place seam side down in 9 x 12 baking dish that has been sprayed with cooking spray. Cover evenly w/ sour cream mixture and cheddar. Bake covered at 350 for 25 minutes. Remove cover last 5 minutes. Sprinkle with diced tomatoes.

    This is pretty good, our family recipe calls for roasted NM green chili that we use in a broth with cornstarch to top our chicken enchiladas, but the cream of mushroom soup is good choice as well. - 9/26/07
