Chipotle Spiced Kidney Beans

1 Tbsp olive oil1 onion, chopped2 cloves of garlic, pressed (or finely chopped)2 chipotle peppers in adobo sauce, chopped 2 Tbsp adobo sauce1 (10 oz) can diced tomatoes 1 Tbsp mild green chilis (or more if you like)2 (15 oz) cans kidney beans, drained and rinsed2 tsp kosher salt2 tsp ground cumin1 tsp chili powder
In a large saute pan, heat olive oil. Saute onions and garlic. Add kidney beans, chipotle peppers, adobo sauce, and tomatoes. Add the rest of the ingredients and cook just till everything looks mixed well and heated through. Serve and enjoy!
