Ground Chicken Mini Meatloaf

1 lb extra lean ground chicken1 tbsp EVOO2 large mushrooms slicedGreen onions sliced 1/4 cup Feta Cheese1 cup breadcrumbs1 extra large egg, rawBloody Mary Mix for a little kick - 100 gms was the only choice on the list....I used just enough for some added moisture
Slice mushrooms and onions and sautee in extra virgin olive oil. Add fresh spinach and continue to sautee until spinach leaves are slightly wilted and bright green. Drain and soak up any extra oil with a paper towel. Add this along with the rest of the ingredients to the ground chicken and mix well. Separate in to 6 balls and place in muffin pan. Bake at 350 for 45 - 45 minutes or until toothpick comes out clean.

This is good. I did notice that the spinach isn't listed on the ingredient list. I used Smart Balance oil, 1 lg. Portabella mushroom, diced, and Olivia's baby spinach. I added about 1/4 cup of Ro-tel sauce in it for moisture (it's a tomato sauce w/more zip), and a little on top of each too. - 8/13/12

Ahhh, sorry! I just bought a large bunch at the farmers market. I would say it's probably equal to a half bag of store bought fresh spinach.
