Cinnamond almond biscotti

Ingredients
3/4 cup butter1 cup white sugar2 eggs2 tsp vanilla extract2 1/2 cups all-purpose flour2 tsp ground cinnamon3/4 tsp baking powder1/4 tsp salt1 cup almonds
Directions
Line cookie sheet with parchment paper - or not. I've never ever had them stick. Preheat oven to 350 degrees F /175 degrees C.

Cream together butter and sugar until light and fluffy, then add the eggs and vanilla and mix well. Combine flour, cinnamon, baking powder, and salt. Mix the dry mix into the egg mixture. Add the nuts.

Divide the dough into two equal portions, and shape each into a log shape. Place them on the prepared baking sheet, and flatted to 3/4 inch thickness. Bake for about 30 minutes - until edges are golden and the center has just a bit of give. Remove and allow to cool slightly.

When loaves are cool enough to handle, use a serrated knife to slice the loaves diagonally into 3/4 inch thick slices. Return the slices to the baking sheet, laying sideways. Bake for an additional 10 minutes, turning half way through.

Allow to cool completely, and store at room temperature.
