Ingredients
3Tbs oil, heated in iron skillet while oven is preheating2 cups stoneground yellow cornmeal1/2 cup flour2 tsp baking powder1 tsp baking soda1 tsp salt2 eggs, slightly beaten1 3/4 cup nonfat milk
Directions
Preheat oven to 425. Place oil in iron skillet and heat in oven while preheating.

combine remaining ingredients well. when oven is hot, pour oil into the batter and mix. pour batter into the skillet and bake 25 minutes.
