Spinach Potato Au Gratin

Ingredients
1 can (15 oz.) sliced white potatoes, drained1/4 cup canned spinach, drained1/4 cup vegetable stock or broth1/4 cup skim milk4 oz silken tofu1/2 cup shredded cheddar-jack cheese1 tsp black pepper
Directions
Preheat oven to 375 degrees.

Blend tofu until smooth. Mix together with all ingredients in 9" square glass baking dish.

Bake uncovered at 375 for 10 minutes. Increase temperature to 425 and bake for another 30 minutes.

Let cool for 5-10 minutes (so the liquid will thicken up) and serve.

Makes 4 servings.
