Roasted Red Pepper Chickpea Dip

15 oz can Chickpeas (garbanzo beans)6 cloves Garlic1 cup sweet red pepper 2 tbsp Olive OilJuice from 1/2 a lemon1/2 tsp. Garam Masala (Indian Spice blend - if you don't have this you can substitute your favorite spice blend)1/2 tsp. Crushed Red PepperSalt to taste
1. Roast the sweet red pepper and garlic in 400 degree oven for about 30 minutes, until garlic is soft and golden.
2. Drain and rinse chickeas, put in blender/food processor.
3. When pepper and garlic are done roasting, add them, and rest of ingredients, to food processor.
4. Blend until smooth - less than 5 minutes.
5. Serve with assorted veggies and/or crackers.
Makes 6 1/4-cup servings.
