Mini Ham 'n' Cheese Frittatas

Ingredients
1/4 pound cubed fully cooked lean ham1 cup (4 ounces) shredded cheddar cheese6 eggs4 egg whites3 tablespoons minced chives2 tablespoons 2% milk1/4 teaspoon salt1/4 teaspoon pepper
Directions
Divide ham evenly among eight muffin cups coated with cooking spray; top with cheese. In a large bowl, beat eggs and whites. Beat in the chives, milk, salt and pepper. Pour over cheese, filling each muffin cup three-fourths full.
Bake at 375° for 22-25 minutes or until a knife inserted near the center comes out clean. Carefully run a knife around edges to loosen; remove from pan. Serve warm. Yield: 8 frittatas.

    These are fabulous. I used eggstirs (real egg product), soy milk (can't have the real stuff) and sargento reduced fast sharp cheddar only 83 calories each.I will be putting this recipe on my menu permanently! - 6/26/10

    I made these for dinner last night and they were delicious. I think next time I will try what other people have done and lower the calorie content. Oh and by the way I used muffin liners aswell as cooking spray and still had a hard time getting them out! - 2/4/11

    LOVE! I make these all the time and have the solution for the sticking problem!!! I tried cooking spray, oiling, cupcake liners and everything stuck. Found cupcake liners at Hobby Lobby made out of PARCHMENT PAPER! Best invention ever. You can also order them online. - 3/27/13

    I must admit that I did not completely read the directions correctly so I made 12 frittatas instead of 8 and my calories were 86. I loved the flavor of this breakfast item. Kept me full until lunch so I was happy. I didn't have any issues with sticking to the pan like some other people. - 1/7/13

    Not bad. A little bland as the recipe stands, but if they were "jacked up" in any way, my kids probably wouldn't eat them. If I were making them just for myself, I'd probably add some herbal or spice accents. - 3/8/12
