Ensalada de Zanahorias (Carrot Salad)

Ingredients
5-7 large carrots1/2 bunch fresh cilantro1/4 c. extra virgin olive oil1/3 of a lemon, squeezedsalt and pepper to taste1 large clove garlic, minced
Directions
Grate the carrots into a bowl and squeeze on lemon juice to keep them from browning. Pull cilantro leaves off the stems and slice or tear them up to release flavor. Add to carrots. Add all other ingredients to bowl and mix with a spoon.

Makes 4-6 servings.
