1Tbsp Oil (olive is listed here, feel free to substitute your own)1 Onion (chopped) add onion to taste2 cups Canned Black Beans (if using dry, make sure to soak them first)
Pour the oil into a deep pot, with at least enough room for 4 cups of liquid.
Chop up the onion into small pieces and cook it in the oil until it becomes soft and starts to turn transparent .
Add the beans and, if needed, 1/4-1/2 c of water.
Cook the beans until they are mushy, then squish them with a potato masher or hand mixer until they are a smooth consistancy.
Enjoy warm as a topping for rice, tacos, burritos, tortillas or plain.
I like to use this bean paste as a tasty substitute for mayo on sandwiches.
