Grilled Veggie Wraps

1 medium zucchini, cut in half lengthwise1 medium yellow squash, cut in half lengthwise1 medium red bell pepper1 medium green bell pepperolive oilsalt and black pepper4 8-in spinach or whole wheat tortilla's4 oz roasted garlic hummus1/2 c shredded fresh spinach leaves
Drizzle zucchini, squash and peppers with olive oil and season to taste with salt and pepper. Grill, turning frequently, until outer skins of peppers are charred and succhini and squash are almost cooked through. Remove from the grill and let cool.
Spread each tortilla with 2 heaping tablespoons hummus. Sprinkle evenly with spinach.
Peel roasted peppers and remove stems and seeds. Slice into thin strips. Slice succhini and squash thinly on the diagonal. Arrange grilled vegetables over hummus and spinach in center of tortillas.
To form the wraps, roll one end in and tuck both sides while rolling. Squeeze as you roll to keep the shape. Secure with toothpicks and slice in half on the diagonal.
