Chelsea's Jambalaya

Ingredients
1.5c Long Grain Enriched Rice1 14.5 oz can diced tomato1 14.5 oz can Tomato Sauce.75c diced onion1 green bell pepper chopped2 stalks celery diced7oz Smoked Ham diced7oz Lean Smoked Turkey Sausage (Jennie-O)1/2lb shrimp cut in half.5T extra virgin olive oil2T+ Cajun seasoningcayenne to tstehot sauce (such as tabasco or tapatillo) to taste1/2t thyme3 bay leaves
Directions
saute onions, celery and bell pepper in .5T oil, add salt pepper dried thyme and oregano untill onions turn clear. add ham and smoked sausage to the saute and brown. Add dieced tomatos and suace. Simmer 15 minutes. Add 1.5 c rice if more liquid is needed for rice add home made chix stock.
