Mediterranean Stuffed Chicken Breasts

Ingredients
3 lrg chicken breasts (800g)1/3 cup feta cheese1/4 cup sun dried tomatoes2 tbsp pine nuts2 tbsp balsamic vinegar1 tbsp olive oil salt & pepper to taste
Directions
Preheat oven to 450.
Cut chicken breasts in half length wise creating 6 thinner portions. Lay chicken pieces inbetween plastic wrap and tenderize until thin enough for rolling).
Mix feta cheese, tomatoes, pine nuts, & balsamic vinegar.
Place filling on chicken & roll chicken.
Rub with olive oil & salt & pepper.
Cook for 10-15 minutes and enjoy!
