2 tbsp Extra Virgin Olive Oil, 2 tbsp 1 c. Onions, chopped 2 tbsp Ginger Root, grated2 c. Carrots, chopped 4 Pears, cored3 c. Vegetable Broth1 tbsp ButterSalt and pepper to taste
In a medium sauce pan on medium-high heat cook olive oil onion and ginger for a couple minutes, stirring occasionally. Add carrots and pears and cook for a couple more minutes. Add enough broth to cover mixture and let simmer until carrots are tender. Puree mixture using a hand blender. Add butter and salt and pepper to taste. Makes about 5 1-cup servings.

BRAVELUTE
Souper! Pears disappear in FLA, so I substitute apples the rest of the year. I'm going to be creative this week and make the soup for my food swap group. A seasonal balsamic vinegar with maple from Kalamazoo Olive Co is great on sweet potato. I think it will be a perfect complement for your soup! - 12/31/13
