Strawberry Cheesecake French Toast

1 carton (8 oz.) of fat free ricotta cheese3 Tbsp. powdered sugar1 tsp. vanilla extract16 slices 1/2 thick French bread2 large eggs 2 cups sliced strawberries (if fresh place in a bowl, sprinkle with 1 Tbsp. of sugar and let sit for 3 or 4 hours). If Frozen, save juice and use over toast instead of syrup.
In a small bowl, combine the ricotta, sugar and vanilla. Spread 2 Tbsp. on each of eight slices of bread; top with remaining bread. In a bowl, beat eggs and mil; soak sandwiches for 1-2 minutes per side.
Cook on a greased hot griddle for 5 minutes on each side over med. heat or until golden brown and heated through. Serve with strawberries in their juices. (Sprinkle with powdered sugar to make a pretty setting.)
