Rob's Broccoli Cheese Omlet

Ingredients
1 TBSP Canola Oil1/2 Cup raw Broccoli, chopped1/2 Cup raw mushrooms, sliced1 egg, whipped frothy1 oz shredded cheese
Directions
Chop 1/2 cup Broccoli and slice 1/2 cup mushrooms. Toss together with 1tsp canola oil in a nonstick pan and cook as desired. (We left the broccoli crunchy but mushrooms cooked at about 5mins. Your tastes may vary as to how done you like your veggies.Cook accordingly) In a small bowl whip egg until frothy. Add remaining canola oil to nonstick pan and heat 30 seconds - 1 min before adding whipped egg. (Med/High setting on stove. If you get the pan hot it will stick!)Cook egg on one side until solid on that side and soft still/a little runny on other before flipping. (about 1 min until beginning to brown.) Flip egg and add 3/4 oz of shredded cheese and 3/4 of cooked veggies. Fold over. Cook until brown on both sides. Flip onto plate add remaining cheese and veggies for garnish. Allow to sit for cheese to melt on top before serving.
