Easy Chicken Curry

Ingredients
2 Chicken Breast halves, boneless, skinless - cubed1 large onion, thinly sliced2 plum tomatoes, diced1 tsp ginger, minced1 tsp garlic, minced1 tsp tomato paste1/2 tsp salt2 tsp curry powder1 tsp canola oil3/4 cup evaporated milk
Directions
1. In a medium skillet over medium heat, cook onions in oil until browned. Add ginger & garlic and cook 1 minute.
2. Add curry powder and cook for 1 minute. Add tomatoes and cook until reduced and well combined, approx 5-7 minutes.
3. Add chicken, tomato paste and salt and cook until chicken is no longer pink.
4. Add evaporated milk, stir, and simmer until chicken is cooked through.

Serve over rice or enjoy with fresh naan.

    I use something similar but without the tomatoes and tomato paste. I add a lot more curry, usually about 2 tbls. I serve it with brown rice and usually broccoli. It is delicious. - 1/20/10

    awesomely simple recipe--only, I agree it was a little bland so I added a lot more curry spice and a couple teaspoons of cumin. I also didn't have any evaporated milk so I used half and half instead. Really nice! - 5/22/09
