2 cups flour1 tsp baking soda1/2 tsp salt1/2 cup butter1/2 cup brown sugar1 tsp vanilla extract1/4 cup truvia or splenda2 large eggs beaten3 cups bananas mashed (about 6)1/4 cup chopped walnutsYou can leave out the walnuts if you wish.
Preheat oven to 350.
Prepare two muffin pans by spraying with non stick spray and dusting with flour or line with papers.
Combine flour, salt and soda and mix well.
In a separate bowl cream together butter, vanilla, sugar and sweetener.
Add eggs and bananas and mix well.
Gradually add flour mixture and stir until just combined.
Place equal amounts into muffin cups and bake for 30 to 40 minutes or until a toothpick inserted in center comes out clean.
Yields 24 muffins.
