Lentils Salad

Ingredients
1 cup of cooked lentils2 medium sized tomatoes chopped2 medium celery stalks chopped1 tsp of fresh chives1.5 tbsp of Extra Virgin Olive Oil1 tbsp of Balsamic Vinegar2 dash of sea salt2 dash of freash ground black peper
Directions
1. Cook 1/2 cup of dried lentils according to package directions (approx 30-40min.).

2. Chop in pieces celery and tomato and put in bowl.

3. When lentils are cooked, place 1 cup with tomato and celery.

4. Add chopped chives, extra virgin olive oil, balsamic vinegar, sea salt and freshly ground black pepper. Mix lightly together and serve.
