Tortilla Pie

Ingredients
1 lb ground turkey1 c chopped onion3/4 c chopped green bell peppercooking spray1 package taco seasoning30 oz (2 cans) pinto beans1 c picante sauce2 cloves garlic1/2 c chopped tomato5 whole wheat 8" tortillas1.5 cups shredded 2% Mexican blend cheese
Directions
Spray non stick skillet with cooking spray. Sautee peppers and onions over med heat until browned. Add turkey and taco seasoning. Mix seasoning into meat until well blended. Cook on med heat until turkey is browned. Turn to med-low heat and continue to cook turkey until done. Remove from heat and add chopped tomatoes.

Meanwhile, add beans & picante sauce (1/4 each at a time) to blender and blend together. (When well blended, place that blended 1/4 into a bowl before adding next 1/4 of ingredients to blender.) Mix in 2 cloves of chopped or minced garlic.

Spray deep pie plate or cake pan with cooking spray. Layer 1 tortilla. Add 1/3 of bean mixture and spread over tortilla. Sprinkle with 1/4 c cheese and layer with another tortilla. Add 1/2 of turkey mixture over tortilla and sprinkle with 1/4 c cheese. Repeat each layer. On last tortilla, spread with remaining bean mixture. Sprinkle remaining 1/2 c cheese over top. Bake at 400 for 20-30 minutes until cheese is melted and pie is heated through.
