Tex-mex Roll ups

Ingredients
1 lb. lean ground beef 1 cup rice (uncooked)1 cup water1 (10 oz) can diced tomatoes and chiles1.5 Tbsp. chili powder 1/2 cup light Sour Cream 1/2 cup Shredded Cheddar Cheese 1/4 cup light Zesty Italian Dressing 10 low fat flour tortilla
Directions
BROWN meat in large pan on medium-high heat; when fully cooked add in rice and water and let simmer for 5 minutes.

Stir in can of diced tomatoesand chiles,chili powder; cook 5 min. stirring occasionally. Remove from heat.

Heat oven ( or you can use your broiler) to 350.

STIR in sour cream and 1/4 cup of the cheese. Spoon about 1/2 cup meat mixture onto each tortilla. Roll up and arrange in 13x9-inch baking pan. ( you an use a toothpick to keep closed while baking) Drizzle with dressing; top with remaining cheese. Bake for 10-15 minutes.

BROIL, 4 to 6 inches from heat source, 3 to 5 min. or until cheese is melted and bubbly.
