Parmesan-Herb Crusted Chicken Cutlets

Ingredients
4 Thin sliced skinless Chicken BreastsCooking Spray1/3 Cup grated Parmesan Cheese1/4 Cup light Mayonnaise2 Tbl minced Green Onions (scallions)1/4 Cup dry Breadcrumbs (I use organic)1 Tsp dried Basil1 Tsp dried Oregano1/4 Tsp Salt1/4 Tsp Black Pepper
Directions
1. Preheat oven to 400 degrees
2. Spray baking dish with Cooking Spray
(about 1/4 second)
3. Place cutlets in baking dish
4. Combine cheese, mayonnaise and
onions
5. Spread evenly over cutlets top
and bottom (I use a pastry brush)
6. Combine Breadcrumbs & remaining
4 ingredients - sprinkle on cutlets top
and bottom)
7. Lightly coat chicken with cooking spray
(about 1/4 second)
8. Bake for 15 min on each side (until
chicken is done)
** I like to broil for about 3 min (or until a
little browned) at the end of baking
time
