Turkey Meatloaf

2 lbs. turkey or chicken breast1 cup onion, chopped1/2 cup celery, diced1 clove garlic, minced1 cup rice, cooked2 egg whites1 cup tomato sauce (sodium-free)1/2 tsp oregano1/2 tsp black pepper1/5 cup chopped parsley1/4 cup tomato sauce (sodium-free)
makes 6 4 oz. servings
1) In a large bowl, mix turkey, onion, celery and garlic
2) Mix all spices together, then add to turkey & mix well.
3) One at a time, add rice, egg whites and 1 cup of tomato sauce to turkey mixture and blend thoroughly.
4) Form mixture into oval shaped loaf, and place in the center of a non-stick loaf pan. Spread 1/4 cup tomato sauce on top.
5) Bake uncovered 1 1/4 hours at 350. Let sit 5 minutes before serving.

You can dress it up differently if you like. This recipe is for low or no salt added. If you aren't watching your sodium intake adding some sodium might take care of the blandness.

Is the protein amount under nutritional information correct? Seems high. - 8/28/09

The calculator appears to have figured the protein wrong. (Or I did). It' should be around 25 to 26 grams of protein.

I'm a little confused. Does the recipe really call for turkey breast instead of ground turkey? - 4/6/09

you can use either ground beef, ground turkey or ground chicken. If you use ground turkey breast or ground chicken breast it is a healthier option.
